More than 30 years in daily operations, and managing strategic business administration of restaurants, including product development, branding, and project coordination. My employment with Garfield’s Pub & Eatery, Barbwire’s Steakhouse, Tumbleweed’s Southwest Grill, Corky’s BBQ, Magnolia’s Fine Dining, Fazoli’s Fast Italian, Barnhill’s Buffets, and Black-eyed Pea, have allowed me to broaden my experience in all aspects of foodservice. It has allowed me to develop relationships with a wide variety of vendors, food-service providers, and industry leaders. I was successful in negotiating major purchasing contracts for multiple concepts and companies and have proven results of lowering costs and increasing revenues without compromising quality.
I have served on several boards including Rocketown, Nashville, for Michael W Smith and DOT Foods Advisory Board. In addition to the restaurants, I have consulted for both the Hospitality and Healthcare industries, on Dietary and Food management.
In my career I helped investors create, design, and develop concepts, such as The Historic Smith House for Joshua Smith, Nashville, TN and Saucehouse BBQ, for Christopher Belk in Athens & Atlanta, GA.

We take a very simplistic and fundamental approach to starting a restaurant, and break it down into several steps.
First - create the concept or theme
Second - create a menu around the theme
Third - design the kitchen so it can produce the menu
Fourth - determine the capacity of the kitchen - it determines the amount of seating or estimated volume of sales
Fifth - determine the location
Sixth - create your business plan and estimate your P&L to see if you can be profitable in the location or concept you have created
Seventh – When leasing never exceed 10% for occupancy costs (rent/lease, taxes, insurance, CAM) of estimated annualized net sales
